DINING

Morocco's imperial city was born from the crossroads of spice routes where countless flavors were shared with the rest of the world. At Jnane Tamsna, we pride ourselves on keeping culinary traditions alive while always adding a personal touch.

Dining at Jnane Tamsna

Our farm-to-table restaurant features a range of dishes that celebrate the rich and diverse cuisines of the African diaspora, while also incorporating contemporary techniques and flavors. Our menu incorporates ingredients from our garden with ethically sourced products from local cooperatives in Middle and High Atlas.

Cultural influences in our kitchen include Mediterranean-Moroccan, Caribbean, and West African flavors.

Meryanne Loum-Martin has roots in Senegal and Guadeloupe. We love to honor her ancestry by featuring recipes from these countries. Co-owner Gary Martin's organic garden boasts a rich harvest of produce that is key to these ancestral foods, from okra to hibiscus to countless varieties of chili peppers, used in our kitchens to create the perfect West Indian hot sauce.

Gary Martin's passion for plants inspires him to cultivate hundreds of varieties of organic vegetables throughout the year, including gorgeous chili peppers.

As part of our commitment to social and environmental sustainability, we support the livelihoods of local communities by sourcing wonderful natural products such as nuts and grains from their cooperatives.

Our Marrakech restaurant is open for lunch and dinner by reservation. For outside guests, we can arrange for you to be picked up and brought to Jnane Tamsna and dropped back off at your hotel or anywhere in Marrakech.

Ethnobotanist Gary Martin has crafted an idyllic fairytale garden for feasting on our land's seasonal produce.

“My garden is a space where you can savor recipes made from our organic produce, all the while sitting at a beautifully decorated table in the shade of our palms. Jnane Tamsna is a place where culture and nature coexist in true harmony.”

CUISINE

Our kitchen accommodates all dietary restrictions and allergies. While Morocco boasts a wealth of flavors, it tends to favor meat-based dishes. Vegans and vegetarians find their culinary bliss at Jnane Tamsna, where our organic farm's wonderful variety of vegetables is at the core of delicious recipes. Our omnivore-friendly recipes are just as refined, with our team elevating quality local meats and fish with beautiful spices from local markets.

Our diverse menu, which caters to all dietary restrictions, from vegan to gluten free, changes daily based on the harvest of our organic gardens and farm.

“We ate spicy Andalou gazpacho, fish pastilla, tagine of ginger chicken served on a bed of jewel-like Jnane pomegranate sprinkled on couscous, followed by a table of desserts - delicious.”

Town & Country

“The food at Jnane Tamsna is nothing less than sensational. Fresh organic fruits and vegetables hand-picked from the garden enliven the tastes of honey, sweet orange, and mellow spices in each slow-cooked and succulent dish. The menu rotates based on seasonal ingredients and seasonal inspiration of the Chef.”
